Do you get bored eating the same regular dishes for lunch and dinner? Well I do!! On top of that, the summer just doesn’t help with the appetite. This cold salad is a refreshing and delicious dish which you can have for dinner or lunch. Only chopping skills are required to make this super easy dish. Also, you can surprise your family by cooking this simple yet yummy dinner some time.
Level is 0 as this only needs basic chopping skills.
The Magic Ingredients:
✓ 3- 4 chicken sausages
✓ 1 small yellow zucchini
✓ 6-7 green lettuce leaves
✓ 6-7 red lettuce leaves
✓ 5-6 bite-sized pieces of broccoli (add more if you like)
✓ 1 red & 1 yellow small capsicum, de-seeded
✓ 1 small cucumber
✓ 1 boiled egg (optional)
✓ 2-3 garlic clove, peeled
✓ 3 tbsp lemon juice or red wine vinegar
✓ 1 tsp mustard sauce
✓ 3 tsp mayonnaise
✓ 2 tsp honey (optional)
✓ 2 tsp olive oil
✓ 1/4th spoon of Salt and pepper to taste
✓ Chop all veggies and keep them aside.
✓ You need to blanch the broccoli to make this cold salad. Put broccoli and its chopped stems in water and add a tablespoon of salt. Cook it for 1-2 minutes. Once cooked, drain the water and keep it aside.
✓ Heat 1tbsp of olive oil in a pan. Sauté the sausages for 2 minutes on medium heat and keep aside once done.
✓ Heat 1tsp oil, add chopped garlic and cook for 30 seconds. Add the zucchini slices and cook for 2 minutes. Sauté the zucchini once or twice to cook all sides properly. Add the capsicum and cook for 30 seconds and switch off the burner.
✓ Put all the ingredients together in a jar, except the egg, and mix it well. Cover the mix and refrigerate for 15-20 minutes. You can refrigerate it longer if you want it colder.
✓ Put the cold mix on a serving plate.
✓ Cut the boiled egg in pieces (Looks better!) and place it on the plate. We suggest you put the egg after mixing the ingredients.
✓ You can sprinkle the pepper powder, mustard sauce and little mayonnaise on the plate to enhance the dressing.
10-15 min, minus the time to refrigerate. These ingredients are good for 1 person.
