Regardless of the culture you were born in, if you know anything about the Bengali culture, then you already know how special sweets are, especially in the period starting from Vijaya Dashami (Dusserah), through Laxmi Puja and right up to Kali Puja (Diwali). But, a healthy lifestyle can get seriously affected during this period by sweet-over-eating! You can help your family and friends eat sweets without feeling too guilty about it. Of course, the same applies to you also!
I like this dish for two reasons. It helps you continue being healthy without compromising on your sweets consumption. The second and more important reason is to make sure the ‘non-fisheterians’ get the proper quantity of Omega 3. Yeah! Flax seed is the vegetarian substitute of fish as both are rich in Omega 3. Needless to say this is super healthy for you if you are deprived of or not so much in love with fish!
You can store this and keep eating it over a week or so! This is not only a sweet dish, it also serves the purpose of a health bar.
A sweet dish that can be a level 0 sounds almost unbelievable, but this one actually is!
The Magic ingredients:
✓ 1/2 cup flaxseeds
✓ 1/2 cup channa daal
✓ 1/4 cup peanuts
✓ 1/4 cup walnuts
✓ 1/4 cup almonds
✓ 1 teaspoon finely crushed cardamom (about 9 cardamoms)
✓ 1/2 cup sugar (increase the sugar if you like it sweeter)
✓ 1 cup water
✓ 3-4 tsp ghee
✓ Dry roast channa daal for 1 minute over medium heat.
✓ Add flaxseed and dry roast for anotherminute over medium heat.
✓ Once it cools down powder both together in thegrinder.
✓ Crush thepeanuts, walnuts and almonds together (I like crunchy tastes so I avoid powdering the nuts. You can powder it if you like).
✓ Dry roast the mix of nuts for 1 minute over medium heat. You need to stir continuously (Tip: avoid over-roasting; it will make the nuts oily).
✓ Add the flax seeds and channa daal powder and dry roast the entire mixturefor another minute.
✓ Turn off the heat, add cardamom powder and mix it well.
✓ Put the entire mixture in a bowl and keep it aside.
✓ To make syrup, boil the sugar and water together in full heat. Once this comes to a boil, lower the heat to medium and let it boil for 2-3 minutes. You need to make the syrup sticky. Add ghee and mix well.
I use sugar syrup to avoid using a lot of ghee. You can powder the sugar and mix with good quantity of hot ghee instead of sugar syrup.
✓ Turn off the heat once the syrup is ready, add the mixture to the syrup and mix it well.
✓ Cool it for a few minutes and make small balls (size as you want). Don’t cool it too much or else the laddu won’t stick well.
✓ You can garnish the laddus with sliced almonds and serve this super healthy sweet.
You can give other shapes to this sweet as well.
You will be done in 15 minutes, if not less. Even if you increase the quantity of ingredients to make more number of laddus it won’t increase your cooking time by much. You can add different varieties of nutsto make it more interesting.
Flaxseeds are a rich source of Omega 3 fatty acids, antioxidant, fiber and vitamins B1& B6. Several studies say flaxseeds can support colon detoxification, fat loss, reduce sugar cravings and help with healthy hair and skin. Some studies also saylignans in flaxseeds may reduce the risk of endometrial and ovarian cancer.
