With your usual lunch and dinner dishes of rice and roti, you are bound to get hit by monotony after a while. Going out for exquisite restaurant food is always an option, but, for people who get bored with regular food at home and do not want to go out every time they want to taste something different, here is the recipe for a healthy and tasty main course that takes very little time to prepare.
You just need 30 minutes to prepare this Honey Mustard Chicken and you are ready to pamper your taste buds and health on a lazy weekend!
The Magic ingredients:
✓ 250 gms chicken breast
✓ 2 table spoons honey
✓ 2-3 table spoons mustard sauce
✓ 1 table spoon lemon juice
✓ 2-3 table spoons soya sauce
✓ ½ table spoon oregano
✓ ½ table spoon black pepper powder
✓ 4-5 pieces of broccoli
✓ 1 medium size red capsicum
✓ 1 small carrot
✓ 4-5 French beans
✓ Salt to taste
✓ 4-5 table spoons white oil
✓ Make cuts in the chicken breast. If your chicken was in the refrigerator, remember to keep it out for 15-30 min before you start using it.
✓ Take a large bowl and mix mustard sauce, honey, soya sauce, lemon juice, oregano, black pepper, salt and the chicken together.
✓ You need to marinate the chicken for 15 minutes. You can marinate the chicken breast for 1 hour also. But remember to refrigerate the chicken if marinating for an hour. Chicken may become mushy and squishy if you marinate it for a long time. So keep that in mind before you decide on the time to marinate it.
✓ While your chicken is marinating, chop beans, carrot, capsicum, broccoli and its stems.
✓ Along with broccoli, I blanch carrot and beans also so that all veggies are soft and need less use of oil. To blanch the veggies put broccoli, its chopped stems, carrot and beans in water and add a table spoon of salt. Cook it for 1-2 minutes. Once cooked, drain the water and keep it aside.
✓ Heat 1 spoon of oil. Cook veggies separately for 30 seconds to 1 minute each and keep them aside. You need to cook the veggies separately so that you can serve it without mixing it which gives a better look to your dish. Also mixing all veggies gives it a salad-like taste and look which I don’t like to have with chicken breast. But you can cook the veggies together if you are okay with it.
✓ Heat 2 table spoons of oil on a nonstick pan to shallow fry the chicken. Place the marinated chicken and cook each side on medium heat for 1 minute. Then cover the pan and keep the chicken on medium heat for 10-15 minutes. Remember to change the side once or twice in between so that all sides are cooked properly.
✓ Place the chicken and veggies on a serving plate, sprinkle black pepper powder and serve it hot.
25-30 minutes minus the time to marinate the chicken. These ingredients are good for one person who is decently hungry. You can have few slices of bread if you are more than decently hungry!
