Our cook was cooking Rajma for the 1st time and ended up pealing every single one of the beans! Please use Rajma for this and any other recipe without pealing it. Pealing it kills the taste completely! God knows how much effort and patience it took our poor Bimaladi to peal that bowl full of Rajma. Till now I can’t stop laughing every time I remember this 😛

The Magic Ingredients:
✓ Rajma / Red Kidney beans – 100 gms
✓ 1 medium potato
✓ 1 medium onion
✓ 2-3 green chillies
✓ 1 spoon ginger paste or ½ inch piece ginger
✓ ½ tsp black pepper powder
✓ ½ tsp garam masala powder
✓ ½ tsp chaat masala powder
✓ ½ tsp jeera powder
✓ ½ tsp dry roasted khuskhus
✓ 1 tsp lemon juice
✓ ¼ tsp Turmeric power
✓ Salt to taste
✓ 3tsp Corn flour (you can use maida or atta also)
✓ Oil to fry
✓ Soak Rajma overnight. Next morning, pressure cook it to make it soft. Drain the water and keep aside.
✓ Boil potato, drain water and keep aside.
✓ Pulse Rajma and potatoes in a mixer 2-3 times.
✓ Finely chop onions, ginger, green chillies.
✓ Heat a pan with 1 tsp oil. Add ginger and green chillies and sauté for 1/2 a minute. Add onion and sauté for 1-2 minutes till they turn brown.
✓ Add rajma and potato mix, chaat masala powder, garam masala powder, black pepper powder, khuskhus, jeera powder, turmeric powder, salt and cook over low flame for 3-4 minutes. Don’t forget to stir continuously to avoid sticking the mix to the pan. Switch the gas off and mix lemon juice.
✓ Once the mixture is cool, make small sized balls and press lightly to make flat tikkis.
✓ Spread corn flour on a plate and evenly coat these tikkis.
✓ Heat oil in a tawa and place the tikkis. Put a few drops of oil around the tikkis and shallow fry till they turn brown. It becomes easy if you deep fry, but it won’t be healthy!
✓ Garnish with onion rings and serve hot with tomato ketchup. You can serve with green chutney also
25-30 minutes, not considering the overnight soaking of the Rajma. This ingredients will make 8 pieces of tikkis. You can increase quantities as per your requirement.
